BUTTER BEANS ON TOAST

Serves 2

 

Ingredients

1) 2 x slices of thick wholemeal bread

2) Olive spread

3) 1 x 400g tin of butter beans

4) 1 x 400g tin of chopped toms

5) 2 large handfuls of spinach

6) Lea and Perrins

7) 1 tsp. smoked paprika

8) Salt and pepper

 

Method

1) Drain the beans and add to a pan. 

2) Open the tomatoes and pour in with the beans.

3) Add in the lea and Perrins. The amount will be subject to how you would like it to taste. I would say start off with less as you can always add more to the dish but you cannot take any way once it’s in there!

4) Add in the smoked paprika and a sprinkling of salt and pepper to the beans and tomatoes mix.

5) Bring to the boil then simmer for 5 minutes, occasionally stirring.

6) Toast the slices of bread and then add a thin covering of olive spread to each of the slices and pop on plates.

7) Once the beans are done, remove them from the heat and top half on each of the slices of bread. 

8) Add a handful of spinach to the side on each plate.
